The Epicurean Preservation System is a hand held pressure / vacuum pump designed for simple one handed operation.  The system comes with the EPS pump, charging base, a couple of wine stoppers, a stopper/pourer, and a Champagne stopper.

The Champagne stopper is designed to be slipped onto the bottleand grab the lip when the upper dome is turned... forming an air-tight seal.  The pump can then be placed on the top and pressurize the content.

The wine stoppers are made of silicone.  In the middle (red) of the cap is a one way valve, allowing air to be removed.  The "pour-able" stopper has a valve which can opened or closed by moving the external lever. 

Note the wine stoppers are color-coded RED and the Champagne stopper is BLUE.  This maps nicely to the color coding on the pump.  Flip the switch to BLUE for pressure, RED for vacuum... but one may not be so clear headed after a few drinks, so just match up the colors on the pump with the color of the stopper and you are good to go.  Yes...you still have to know whether the bottle in your hand is wine (RED) or bubbly (BLUE), the EPS can't help you with that :-)

The charging base is also quite user friendly.  Just put the pump in the charger, the contacts are circular and are designed such that no alignment is necessary.

The charging base may be wall-mounted if counter space is tight.  We prefer to have the pump on a table.  The stainless steel and black of the EPS will blend well in most modern kitchens.  Once we have the unit fully charged, we'll crack open a few bottles and give this a test :-)

Wine & Champagne Saver

We try to finish what we open... whether it is beer, wine, or bubbly.  However, sometimes try as we may, we have to admit we've had enough :-)  Sometimes we just want to have a little and save some for another day.  Whatever the reason and whatever the content, the Epicurean Preservation System (EPS) will keep it fresher longer.

This system is different from other units on the market in that it can both pump air into the bottle or remove it depending on whether it is Champagne or wine.   It looks like we will have to open a few bottle of wine and Champagne this weekend to test out this device.
